
Ingredients
- 1 cup roughly chopped parsley
- 1 cup roughly chopped baby spinach
- 2 small garlic cloves
- ½ cup of mixed nuts & seeds
- Walnut
- Cashew
- Pumpkin Seed
- 4 tablespoons of lime juice
- 1 teaspoon of oil (optional)
- Salt & pepper
- 5 cups of cooked rice
Directions
- Prepare the pesto by adding all the ingredients except the rice into a food processor.
- Process until it resembles a paste-like consistency.
- Into a wok, add in the prepared pesto and cooked rice.
- Sauté in low to medium heat stirring frequently for 2-4 minutes.
- Adjust salt & pepper level according to taste.
- Serve immediately.
