Maple Glazed Tofu & Broccoli Stir Fry

A quick and easy one skillet weeknight meal that takes less than 30 minutes to make!

Quick and easy dish. Perfect for a busy weeknight. This is a super easy meal that can be made in under 30 minutes! Everything is made in one pan making for an easy clean up. This dish is also very versatile and can be made in many different ways depending on what you have on hand. 

You can always substitute the broccoli with carrots, bell peppers or cauliflower!

Ingredients

  • 2 tablespoons oil divided
  • 2 cups broccoli, small pieces
  • 1/2 packet of tofu, 7oz 
  • cloves garlic minced
  • 1/8 cup low sodium soy sauce or coconut amino 
  • 1/8 cup maple syrup 
  • 1 teaspoon sesame oil
  • 2 teaspoons cornstarch or arrowroot powder
  • 1/4 cup water
  • Chili flakes to taste
  • salt and pepper to taste
  • sesame seeds for garnish if desired

Directions  

Heat 1 tablespoon of olive oil in a large skillet. Add in the broccoli and sauté until tender and caramelized in medium-high heat, 4-5 minutes. Remove broccoli from the pan and set aside. 

Meanwhile cut the tofu into 1/2 to1 inch cube. Make sure to press the tofu with a paper towel to remove extra water.

Add the remaining tablespoon of olive oil to the same skillet, pan-fry tofu until crispy and caramelized on the outside, around 3-4 minutes on each side.

After add in the garlic. While that’s frying, add the chili flakes and sauté everything for a few seconds. Season the tofu mixture with salt and pepper. 

Meanwhile in a small bowl combine soy sauce, maple syrup, and sesame oil. In another small bowl mix the cornstarch with water & whisk. 

Add the sauce to the pan with tofu along with the broccoli. Add the cornstarch mixture to the sauce. Simmer until the sauce has thickened, 1-2 minutes and serve immediately with sesame seeds for garnish, if desired.
