
Ingredients
- Dates- 8 large pieces or ¾ cup
- Oats- ¼ cup
- Cashews- ¼ cup
- Vanilla bean paste - ¼ teaspoon
Direction
In a large food processor, add cashews & oats. Pulse & break them into small pieces. Meanwhile, remove the seeds from dates, and soften the dates by soaking them in hot water for a few minutes. Break each softened date into chucks.
Add in the rest of the ingredients including the dates into the same food processor, and process until a sticky, uniform dough is formed.
Scoop about 1 tablespoon full the batter, roll it between your hands into a ball.
