Breakfast Potato Hash
- 1 ½ cups of potatoes cut into small cubes
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon chili powder
- 1 tablespoon olive oil
- ½ cup of bell pepper
- ¼ cup onion
- ¼ cup tomatoes
Peel the potatoes and cut them into ½” to 1” small cube size pieces.
Mix all the spices with the potatoes.
Add in ½ tablespoon of olive oil and mix again.
Heat nonstick pan over medium heat.
Add in potato mixture.
Spread out the pieces in a single layer without overlapping
Let it cook for about 7 minutes undisturbed until brown on the bottom.
Flip the potatoes and cook undisturbed for additional 6-8 minutes.
Now chop onion, tomatoes, and bell peppers into small ½ inch pieces and add into the potato mixture and combine everything together.
Add in the rest of the oil and combine again.
Cook for about 8 more minutes or until everything looks golden brown.
Add in salt & pepper to taste
Serve hot with a side of toast and avocados
